Growing up, Oatsies were a huge staple for us, thanks to my Mom. Tonight, low on ingredients, I gave them a mini twist. haha. They’re super easy and nothing but good. Here’s how to make them:

2 c. rolled oats
1/2 c. packed brown sugar
1/2 c. margarine
1 t. vanilla
1/2 t. salt
1/4 c. dark corn syrup
1 pk (6 oz) semi-sweet chocolate chips (I used mini chips for this one)

Heat oven to 400 degrees. Mix oats and sugar. Melt butter (in micro is fine), add syrup, salt, and vanilla. Combine with oats and sugar mix. Pat into a greased 9×9 cake pan or into mini cupcake tins. Bake 8-10 minutes until edges are browning. Once out of the oven, scatter chips on top and let melt. Then cut into bars, if applicable.

    I absolutely LOVE the Betty Crocker Cooky Book. I originally bought the new version thinking it’d be comparable, but the original is hands down the best cookie book ever. The new one’s good, too, but if you’re making kaleidescope cookies (or any other recipe that’s in both books), use the original recipe. Works way better.
